Scrap the same old sarnies and dive into these simple & healthy recipe ideas to mix up your midday meals!
Quick & Tasty Couscous
This flavoursome couscous works perfectly by itself for a light yet satisfying meal.
-1tsp cumin powder
-1/4 tsp. ground ginger
-1/2 tsp. coriander powder
-1/2 tsp. of ground garlic, fresh or paste
-1 vegetable stock broth
-1 mint leaf torn up
-1/2 red onion
-1/2 pepper yellow or orange
-A couple of baby tomatoes
-1/2 a lemon
-Oil to cook with. I used coconut oil here.
-Feta cheese to crumble on top
Step 1: Chop the onion, pepper and tomato into small pieces and cook in a frying pan with the oil of your choice; cook until the onions brown
Step 2: Add the powders, garlic and torn up mint leaf to this adding a dash of water too. Stir for a minute or so and then add the vegetable stock broth with a little more water. This should form a nice pasty sauce
Step 3: Pour onto the couscous, add more water (boiling) and then mix till the couscous has absorbed it all in.
Step 4: Crumble some feta cheese on-top, squeeze the lemon over and its ready to serve! This is also amazing cold with salads

Mexican Bean Wraps
Wrap up these delicious meat free sandwiches in just 10-15 minutes. Perfect for one OR the whole family!
For the filling –
-1 white onion (chopped)
-400g kidney beans
-400g black-eyed beans
-2 peppers (1 red & 1 green)
-6 button mushrooms (sliced)
-6 cherry tomatoes (sliced)
-1tbsp tomato puree
-Half a cup of sweetcorn
-Little gem lettuce
-Dried chilli flakes
-Salt & pepper
Step 1: Fry the onions in olive oil on a low heat for 5 minutes until softened
Step 2: Add the peppers and fry for a further 5 minutes
Step 3: Then, add the rest of the filling ingredients and stir occasionally for a further 10 minutes.
Step 4: Whilst the ingredients are cooking, mash the avocado and season with salt, pepper and a few chilli flakes
Step 5: Heat the tortillas in the microwave for 30 seconds to warm them up
Step 6: Serve the wraps up by spreading the mashed avocado followed by grated cheese, little gem lettuce and finishing off with the fajita filling!
Chinese Chicken Stir-fry
A classic dish with a Chinese twist! Try this flavour oozing stir-fry as a midday or evening meal.
-350g diced chicken breast
-1 pack of pak choi (chopped)
-1/2 packet bean sprouts
-1 red pepper
-Bunch of spring onions
-1tsp grated ginger
-1st Chinese five spice
-1tsp chopped chilli
-2tbsp soy sauce
-2tbsp hoisin sauce
Step1: Heat the wok until smoking, then add the chicken
Step 2: Add the Chinese five spice and stir with the chicken for about 5-7 minutes Remove the chicken from the pan and set aside
Step 3: In the wok, add the chilli’s, spring onion & ginger
Step 4: Once stirred, add the peppers. After a further 2 minutes add all other veg
Step 5: Once the veg is cooked, add the cooked chicken and take off the heat
Step 6: Once off the heat, add the soy sauce and hoisin sauce
Step 7: Sprinkle some chopped springing onions over the top and you’re ready to serve!
TIP: You can also add noodles or rice to this dish. If you are wanting something with lower carbs’ then courgetti or cauliflower rice works well to bulk up the meal with lots of vitamins and nutrients.
